| Stuffed Cucumbers

<< Ingredients >> 1 large cucumber 2 limes 1 med tomato 1/4 cup minced onion 3/4 pound whitefish
<< Preparation >> 1. Remove the skin and bones from the fish.
2. Put whitefish into a bowl and pour lime juice over it.
3. Cover the fish and refrigerate overnight.
4. Strain fish and squeeze the juice out of it.
5. Remove the seed and pulp from the tomatoes. Chop the tomatoes into small pieces. Strain the tomatoes to remove the juice.
6. Mix fish, tomatoes and onions together.
7. Scoop the middle of the cucumbers out. Stuff the cucumber with the fish mixture. |

<< Preparation >> 1. Slice cantaloupe into small chunks.
2. Slice honeydew melon into small chunks.
3. Slice oranges into small chunks.
4. Add blueberries.
5. Mix everything together. |

<< Ingredients >> 1 small cucumber lettuce 1 small red onion 1 or 2 small tomatoes
<< Preparation >> 1. Shred some lettuce, wash and spin in the salad spinner.
2. Peel and slice the cucumber.
3. Slice the onion thinly.
4. Chop the tomatoes into small chunks.
5. Combine all the ingredients into a bowl and toss. |

<< Ingredients >> 1 cup almonds 1 cup apricots (not soaked) 1 cup shredded coconut 1/4 cup honey long narrow container to shape the candy
<< Preparation >> 1. Ground the almonds in a food processor.
2. Ground the apricots in a food processor.
3. Place all ingredients into a large bowl and mix thoroughly.
4. Line candy container with wax paper or plastic wrap.
5. Spoon candy mixture into the container and press it down with a fork.
6. Put the container into the fridge so the mixture will harden.
7. Cut candy into the desired shape and wrap with wax paper. |

2. Add the yogurt.
3. Add the peanut butter.
4. Chop up the banana and put the pieces into the blender.

| Frozen Raspberry Sorbet

<< Ingredients >> 2 egg whites 2 1/2 cup raspberries 1/2 cup honey 2 cups yogurt
<< Preparation >> 1. Puree the raspberries in a food processor.
2. Remove the seeds by passing the berries through a strainer.
3. Combine the puree with the yogurt and the honey.
4. Whisk in the egg whites.
5. Freeze the mixture until the edges are frozen.
6. Mix the mixture thoroughly and put back into the freezer.
7. Leave it in the freezer until you are ready to eat. |

<< Ingredients >> 2 carrots 6 cherry tomatoes 1 small onion 1 small red pepper 2 small salmon steaks
<< Marinade >> 1/4 cup soy sauce 1/2 tsp ginger juice from one lemon 1/2 tsp thyme
<< Preparation >> 1. Put salmon steaks into a bowl. Pour marinade over them.
2. Cover the salmon and place in the fridge for 3 hours. Throw out the marinade.
3. Peel the skin from the salmon.
4. Cut the salmon into small chunks.
5. Put carrots, onions, fish and tomatoes on the skewers.

<< Preparation >> 1. Ground the almonds in a food processor.
2. Pour lemon juice, egg yolks, almonds and carrot juice into the blender and blend.
3. Add the rest of the ingredients and blend. |

<< Ingredients >> 6 medium tomatoes 2 oz almonds 2 tsp chopped parsley dash of salt dash of nutmeg
<< Preparation >> 1. Put some water into a small pot. Bring the water to a boil. Turn off the stove.
2. Cut a small x on the bottom of each tomato. Drop the tomatoes into the water for 30 seconds.
3. Take the tomatoes out of the water and drop them into ice cold water.
4. Peel the skin off each tomato.
5. Chop the tomatoes into small pieces.
6. Blend the almonds in a food processor.
7. Put almonds, tomatoes, salt, parsley, nutmeg and a little water into the blender. Blend until very smooth.
8. Pour soup into bowls and garnish with nutmeg and parsley. |

<< Ingredients >> 1 large avocado lettuce 1/2 cup alfalfa sprouts 1 small radish 1 small mushroom
<< Preparation >> 1. Shred some lettuce. Wash and spin the lettuce in a lettuce spinner. Arrange the lettuce on a plate.
2. Slice the avocado in half. Remove the seed. Place avocado halves on the lettuce.
3. Chop radishes into small pieces. Mix with sprouts.
4. Fill avocado halves with sprout mixture.
5. Chop mushrooms into small pies and sprinkle over the sprout mixture.
6. Spoon dressing over everything.
